酱骨头算是东北的一道传统名菜。根据主料的不同有酱脊骨,酱排骨,和酱棒骨。这几种原材料有一个共同的特点,就是经得起长时间的炖煮而肉质不会发柴、发死。其中又因为猪脊骨经炖煮后口感最为软糯,啃起来也更有乐趣(费劲儿啊:))而最受欢迎。
